Cocktail Recipe: Mince Pie Martini

Nothing is more evocative of Christmas than the rich aroma of mincemeat, and this Christmas cocktail from Sub 13 captures that in a surprisingly refreshing cocktail.

To start with they make a mincemeat syrup by heating mincemeat with golden caster sugar and water, before straining through muslin. To this, they add gin, sweet vermouth and a dash of dark rum.

Ingredients:

  • 25ml mincemeat syrup
  • 20ml sugar syrup
  • 25ml London dry gin
  • 25ml sweet vermouth
  • 5ml dark rum

Glass: Martini

Garnish: Rim glass with a 4:1 mixture of caster sugar and mixed spice. Clip a washed holly leaf pegged to the rim of the glass with a small peg and dust with icing sugar.

Method: Combine all ingredients in a shaker, shake with ice cubes. Rim a chilled martini glass with the sugar and spice mixture, strain the cocktail into the glass. Garnish with the holly leaf and dust with icing sugar.
